The dishes that anchor our menu—shaved fresh from the trompo, braised overnight in dried chiles, and served on hot comal tortillas.

Pork marinated in achiote and chile, shaved from the trompo with charred pineapple.

Beef braised overnight in dried chile, griddled with cheese, served with consome.

Pork confit in its own fat, crisped on the plancha, pickled red onion.

Sponge soaked in three milks, whipped cream, cinnamon, one strawberry.
The Craft & Heritage
Lumbre means ember, and it is the first thing we make every day. The trompo turns from open until close, the beef for the birria goes into the pot the night before, and the masa is pressed by hand each morning.
The menu is short on purpose. Seven tacos, a few tortas, good sides, cold aguas frescas. Every plate leaves the pass the moment it is ready, never later.
Come for lunch, stay for the horchata. If you are bringing a crowd, call ahead and we will set the long table.
